Daniel Sak, Tango's owner, grew up on a converted Dutch house barge. He spotted the Tango when it was moored near Carcassonne. He was 13 years old and it was love at first sight. Twenty years later he made his dreams come true and purchased Tango. Daniel is a vintner, with his own vintage red wine, Les Deux Cochons. He is also a graduate of the French chef school in Beaune, France.

The Le Somail neighborhood is located on either side of the Canal du Midi, at the intersection of three communes, Ginestas, Saint Nazaire and Salleles d'Aude. This charming French village owes its existence to the canal, which was founded in the 17th century to serve those who operated and worked on the peniches which were an important form of commercial transport at the time. Many of the structures in Le Somail are listed as Monuments Historiques in the Base Mérimée, an architectural heritage database managed by the French Ministry of Culture. Included are the 17th-century stone bridge over the canal, the chapel that sits next to it and la glacière (the refrigerator).
